Its been awhile, but Happy belated thanksgiving

Hope everyone had a great holiday with family and friends... There is so much i am thankful for. This past year has been so amazing. I actually feel like i am growing into a mature young woman and the pieces of my "LIFE" puzzle is falling into place.

This year i had the pleasure of preparing thanksgiving dinner all by myself...Yep that's right just me!!! it was such a great experience, a little overwhelming but at the end of the day i am glad i can check that off my list of things i have done. I was very nervous about cooking the turkey... it being under/ over cooked or drying it out, so i was determined to look for the perfect turkey recipe. My FAB boss game me a great brine recipe, which is sorta like marinating the turkey overnight in a flavorful herb filled mixture and boy oh boy This was the best turkey I've eaten in my life.

BE AWARE : IF YOU EVER PLAN ON COOKING A TURKEY MAKE SURE YOU CLEAN IT AND TAKE THE NECK AND OTHER INSIDES OUT!!

One of my faves!

I love baking I just don't have too much time to post all my great recipes. Here is a easy and tasty one I love.

Chocolate Chip Cookie Cheesecake Cups (4C's)


What you'll need:

12 cupcake pan liners
12 pieces of cookie dough (i used the ones that are already cut into squares) 
1 (8 oz) package of cream cheese
1/2 cup of condensed sweetened milk
1 large egg
1 teaspoon of vanilla extract
1 can of cherry pie filing (OPTIONAL, I usually use fresh strawberries or caramel and chocolate sauce. You may also do plain and top it with nothing) 

Preheat your oven to 325. Line your muffin pan with your cupcake cups. Place 1 cookie per cup and place in the oven. Bake for about 10 to 12 minuets or until cookie dough has spread to edges of the cups.

while the cookies are baking, Beat together all other ingredients, except for the pie filing topping. Mix until mixture is smooth, creamy and lump free.Once cookies are done, spoon about 3 tablespoons of cream cheese mixture over each cookie cup. Return to oven for 15 to 18 or until set. Let cool completely... they taste much when cold

Last weekend i had to go up to Cal Berkeley for the Oregon vs. Berkeley game... i had so much fun. Although it was a very long and exhausting trip, it ended up being a great trip over all. I love the small town/ college town feel... no pics just felt like sharing

...and the winner is???...

sorry i am so delayed, been a little busy at the office :)... anyway i had the most amazing weekend... Friday night i went to the Lakers and Clippers game and Saturday i went a very important college game... USC and Oregon (QUACK QUACK)

I seriously have the coolest job ever and got a chance to experience two LA basketball teams duke it out this past Friday night. I have a soft spot for both teams so i wasn't cheering for any particular team to win...

My liddo big brother (he's younger but WAY BIGGER than me) goes to and plays for the University of Oregon b.k.a. THE DUCKSI had soo much fun, i love the college rivalries that go on at foot ball games. All that mattered at the end of the day was who was going to win and of course without a doubt it was the Ducks :)
