Make you wanna slap your momma!!! :)

i love love LOVE cooking and baking, it's very relaxing at times (when your prep yourself). i am going to try and post more recipes whenever i have down time. Here is a recipe that's very easy and great for feeding large groups on a budget. I am not big on exact measurements unless it's baking,  i feel you should be able to substitute to your liking!

BAKED POTATO AND BUFFALO CHICKEN CASSEROLE  

What you'll need:

8 -10 medium potatoes (of your choice) cut into cubes, you may leave the skin on if you like.

chicken breast cut into cubes (i used four large chicken breast)

1/3 cup of olive oil

1 1/2 tbsp of salt

1 tbsp black pepper

1 tbsp paprika (optional)

2 tbsp garlic powder

6 tbsp of hot sauce (optional)


Topping:

shredded cheese of your choice

crumbled bacon

chopped green onion


Preheat over to 500F. In a large mixing bowl mix together olive oil, salt, black pepper, paprika, garlic powder, and hot sauce. Add the potatoes to the hot sauce mixture. Once coated well place potatoes on a non stick baking dish. DO NOT POUR EXTRA MIXTURE ON POTATOES, LEAVE AS MUCH OF THE HOT SAUCE MIXTURE IN THE BOWL AS POSSIBLE. Bake potatoes for 40 - 50 mins., depending on your oven. Stir potatoes every 10 - 15 mins., cook until browned and crispy. In the meantime add chicken to the remaining hot sauce mixture, coat with mixture and let it marinate until potatoes are done.
When the potatoes are done, take out the oven and place uncooked pre-coated  chicken on top. Lower oven temperature to 400F and place dish into oven until chicken is cooked through. while the dish is in the oven mix together cheese, bacon, and green onions. Once chicken is done take dish out the oven and sprinkle cheese mixture on top, return to oven for 15 mins or until cheese is melted.

I served with sour cream, you can also serve with extra hot sauce or ranch.... ENJOY


As stated before i am not big on measurements, you should be able jazz anything up to your liking.
